Chinese restaurants bloom worldwide, international talent needed

Chinese restaurants overseas have an urgent need to explore new models for training local staff to continue smooth operations, Jiang Junxian, president of China Cuisine Association, said at the Third International Forum of China Hotel and Catering Industry Vocational Education, held on October 14, 2017, in Chongqing, Chinanews.com reported.

In 2017, the sales volume of the Chinese catering industry is expected to reach 3.9 to 4 trillion yuan.

Currently, there are over 200,000 competitive Chinese restaurants across more than 180 countries and regions, showing strong momentum to expand, but their integration with local cultures is far from sufficient.

To equip local personnel with flexible operational skills and cultural knowledge about the Chinese catering industry, Jiang said, a vocational education model of coming in and going out will be employed, with frequent exchanges between international vocational education institutions to be conducted.

A large number of Chinese vocational institutions have established cooperative relations with their overseas counterparts and conducted exchanges on training staff, course reform, vocational research and model innovation, among other areas.

The Chinese Cuisine Association has also joined hands with the Chamber of Profession and Handicraft Industry in Seine-Maritime, France to arrange exchanges for students and teaching staff. The association is actively seeking cooperation with the National Restaurant Association headquartered in Washington DC, hoping to incorporate vocational education into cultural and people to people exchanges, Jiang added.
