Fishermen are seen drying fish after a big harvest near Poyang Lake in Jiangxi. For ages, the Chinese believe that food should not be wasted. So when fish is plentiful, they preserve the fish by drying them under the sun. High in nutrient content, dried fish make a frugal snack and are commonly used in soups and stews in Chinese cuisines.
